Boggy Creek Road Green Bean and Macadamia Salad

This all occasions dish first appeared on Janet's dinner, or maybe lunch, table at Valla Beach about 25 years ago. At the time the Silvias, fine neighbours and generational farmers up Boggy Creek Road were growing the most stunning bean crops across the road from our macadamia farm.
Later on, Kevin Silva would work with dad as he does now, and get into macadamias himself. We would get these magic beans by the box at Christmas, if know about vegetables straight off the farm, well you know.
The dish is a beautifully simple way to elevate what are already sensational beans. Of course olive oil also works a treat but I think the lighter touch of macadamia lets the rest shine a little brighter. Do not overcook the beans!
Ingredients
Green Beans
Macadamia pieces ( raw or toasted)
Macadamia Oil
Sherry Vinegar
Sea salt
Method
Lightly steam beans, tops with macadamia pieces. Dress with macadamia oil & sherry vinegar and a pinch of sea salt. Serve warm or cold.
