Ingredients

⅓ cup organic or premium extra virgin macadamia oil

½ cup honey

2 eggs, if you’re vegan use flax eggs

1 cup mashed ripe banana (approx 2 large bananas)

¼ cup milk of choice or water
-
1 teaspoon baking soda (NOT baking powder; they aren’t the same!)

1 teaspoon vanilla extract
-
½ teaspoon salt
-
½ teaspoon ground cinnamon, plus more to swirl on top
-
1 ¾ cups white whole wheat flour, regular whole wheat flour or gluten free all purpose flour

¼ cup chopped macadamia nuts
-
¼ cup dark, milk or white chocolate chips. Or Cacao lower sugar, more fibre and protein

¼ cup fresh or frozen berries (we like fresh raspberries)
Directions
Preheat oven to 165°C and grease a 9×5-inch (23cm x 13cm) loaf pan.
In a large bowl, whisk together macadamia oil and honey. Add eggs, mashed bananas, and milk.
Add baking soda, vanilla, salt, and cinnamon. Whisk to blend.
Stir in flour until just combined. Some lumps are fine.
Gently fold in macadamia nuts, chocolate chips and raspberries.
Pour batter into the loaf pan, sprinkle with cinnamon, and create a swirl pattern with a knife if desired.
Bake for 55-60 minutes, or until a toothpick comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing. Enjoy!
