Ingredients
-
2 cans of tuna in water, drained (about 5 oz each)
-
1/4 cup mayonnaise
-
1/4 cup chopped macadamia nuts
-
1 cup shredded cheddar cheese
-
4 large flour tortillas
-
Salt and pepper to taste
-
Rocket or green salad leaves to garnish
-
Optional: Lime wedges for serving
-
Splash macadamia nut oil
Directions
Prepare the Filling: In a medium bowl, mix the drained tuna, mayonnaise, and chopped macadamia nuts. Season with salt and pepper to taste. Stir until well combined.
Assemble the Quesadillas: Lay out two tortillas on a flat surface. Evenly distribute half of the shredded cheddar cheese on each tortilla. Spoon the tuna mixture over the cheese, spreading it out evenly. Top with the remaining cheese, then place the other two tortillas on top to create two quesadillas.
Cook the Quesadillas: Heat a large skillet or griddle over medium heat. Carefully transfer one quesadilla to the skillet. Cook for about 2-3 minutes on each side or until the tortillas are golden brown and the cheese is melted. Repeat with the second quesadilla.
Serve: Remove from the skillet, let cool for a minute, then cut each quesadilla into quarters. Garnish with fresh herbs if desired and serve with lime wedges for an extra zesty kick.
